When it comes to turning those handpicked grapes into juice, we rely on native yeast, no use of any additives in the winemaking process. After we took the juices out of gravity, we try to discreetly guide the fermentation, based on our experience and our observation in nature, using wood barrels, clay amphoras and concrete egg tanks.
